How secure is Touch ID?

Touch ID, which uses your fingerprint to authenticate you, is unique to each individual and the fingerprint cannot be stolen from the phone even if it is lost or stolen.

The phone passcode is required in order to register Touch ID and to add or remove fingerprints.
